Fried Zerri
Description
Fish dishes are very popular in Sardinia and in Sassari and in the Sassari area a delicious and appetizing dish is cooked, fried zerri .
These delicious little fish, once fried, can be enjoyed whole , head included, and served as a delicious appetizer or appetizing finger food, or even as a second course at a convivial dinner.
For this dish to be a success, make sure you clean the zerri carefully , using a sharp knife, and that the oil is boiling hot before starting to cook.

- Zerri 600 g
- Whole wheat semolina 200 g
- Peanut oil 400 ml
- Salt 8 g
Instructions
- 1 To prepare the fried zerri, start by cleaning the fish: cut them with a knife to remove the innards, scale them from tail to head and remove the fins, then wash them under running water and dry them with a kitchen towel.
- 2 At this point, pass the zerri in the wheat semolina, shake off the excess semolina and then dip them in the boiling peanut oil.
- 3 Cook them well on both sides until they become golden brown, then remove them with tongs or a slotted spoon and place them on a serving plate lined with paper towels to drain the excess oil.
- 4 Sprinkle with salt and serve the fried zerri hot or warm, to your taste.
