Trofie alla carlofortina is a very tasty first course that combines the typical flavours of Sardinia with those of Liguria .

In the 16th century, in fact, the Ligurians colonised the Sardinian island of Carloforte, bringing with them the traditions and products of their land, such as trofie and pesto which, in this dish, are combined with tuna, creating a truly irresistible combination of flavours.

  • Trofie 380 g
  • Tuna 300 g
  • Pesto alla Genovese 200 g
  • Cherry tomatoes 20 ml
  • Onions 1
  • Extra virgin olive oil q.b.
  • Salt q.b.

Instructions

  • 1 Carlofortina-style trofie is an easy recipe to make. To make it, you'll need a fresh tuna steak. Peel and chop the onion and sauté it in a pan with a few tablespoons of extra virgin olive oil. Once slightly softened, add the diced tuna and sauté for 2 or 3 minutes, then add the halved cherry tomatoes. Season with a little salt and cook for at least 10 minutes.
  • 2 Meanwhile, bring a pot of salted water to a boil. Once it's boiling, add the trofie and cook for the time indicated on the package (5 to 10 minutes, depending on whether you used fresh pasta).
  • 3 Once the tuna sauce is ready, turn off the heat and add the pesto alla genovese, stirring well to combine the ingredients. Once the pasta is cooked, drain it and pour it into the pan to season it. Then, plate your trofie alla carlofortina and serve immediately.

is held right in Carloforte, an event dedicated to promoting the ancient culture of tuna and tuna fishing. Among other things, the festival features a culinary challenge between international chefs who must use bluefin tuna as the basis for various dishes. Throughout the event, you can sample dishes featuring this exceptional and increasingly rare ingredient. This festival takes place in June in Sardinia.
