Description

A traditional Sardinian dish from the humble, peasant cuisine, fava beans Sassari-style, or “fave a ribisari”, can be served either as an appetizer or as a side dish.

By planning ahead, you can prepare them the day before and let them rest overnight: the dressing made with parsley, olive oil, garlic, and chili will make them flavorful and irresistible.

If you want to cut the preparation time in half, you can use pre-cooked fava beans instead of fresh ones to shell — just drain them from their preserving liquid and rinse them well before seasoning.

  • Fresh fava beans 667 g
  • Garlic 7 g
  • Parsley 10 g
  • Chili pepper 4 g
  • Rock salt 2 g
  • Extra virgin olive oil 24 g
  • Salt 2 g

Instructions

  • 1 To prepare Fava Beans Sassari-Style, shell the fava beans, place them in a colander, and rinse them under running water. Then, boil them in a pot of salted water for about 15 minutes. Drain and set them aside in a large bowl.
  • 2 In the meantime, on a cutting board, finely chop the garlic, parsley, and chili together, then let them soak in olive oil. Use this dressing to season the fava beans, mixing everything well.
  • 3 Cover the bowl with plastic wrap and let it rest in the refrigerator for 30 minutes to allow the flavors to develop.
  • 4 Once the resting time has passed, remove the Fava Beans Sassari-Style from the fridge and serve them on plates.
