Description
Skate, also known in Sardinia as “ziruria,” is a fish with very delicious flesh , suitable for use in numerous preparations. In the Bosa area, near Alghero , also famous for its lobsters, an excellent skate is prepared in agliata.
The only pitfall of this recipe is cleaning the skate, which must be done carefully to avoid waste. If you’re unsure how to do it, ask your trusted fishmonger for help.

- Skate 700 g
- Dried tomatoes 5
- 00 Flour q.b.
- Garlic 2
- Chili pepper 1
- Tomato puree 350 ml
- Vinegar 200 ml
- Extra virgin olive oil q.b.
- Frying oil q.b.
- Salt q.b.
Instructions
- 1 Preparing skate in agliata is really very simple. After cleaning the skate, or having it cleaned by the fishmonger, cut it into medium-sized pieces and flour them. Set aside the fish livers: you'll need them in the next step of the recipe.
- 2 Heat plenty of frying oil in a deep pan. Once hot, fry the skate, dipping the floured pieces into the hot oil. Once golden brown, drain them, place them on a plate lined with paper towels to dry, and then arrange them in a baking dish.
- 3 Prepare the marinade. Chop the garlic and chili pepper and sauté them in a pan with 4 tablespoons of extra virgin olive oil. Chop the livers and sun-dried tomatoes, and when the garlic is slightly softened, add them to the pan. Cook for about a minute, then add the tomato puree.
- 4 After letting the sauce cook for 10 minutes, stirring occasionally, add the vinegar, season lightly with salt, and continue cooking until you have a fairly thick sauce.
- 5 While you wait for the agliata to cool, chop the parsley. Once the sauce is cold, pour it over the fried skate pieces, sprinkle with chopped parsley, cover tightly, and let the agliata skate rest in the refrigerator for about a day before enjoying.
