If you’re looking for a soft, delicious, and light dessert, this whole wheat plum cake recipe is perfect for you. Its dough doesn’t use butter, just plain yogurt, seed oil, and good honey. If you want to make it even more delicious, you can replace the plain yogurt with fruit yogurt.
Ingredients

- Whole wheat flour 120 g
- Potato starch 50 g
- Eggs 2
- Arborea Low-Fat Plain Yogurt 170 g
- Brown sugar 70 g
- Honey 30 g
- Sunflower oil 80 ml
- Baking powder 0.5 bustine
- Grated zest of 1 lemon
- Salt 1 pizzichi
- Milk q.b.
Instructions
- 1 Making this whole wheat yogurt plum cake is very simple. Crack the eggs into a bowl, add the sugar, honey, grated lemon zest, and a pinch of salt, and beat with an electric mixer until well-stirred.
- 2 Gently and gradually add the yogurt to the frothy mixture, stirring with a spatula, taking care to combine everything by moving the spatula from top to bottom, so as not to deflate the mixture.
- 3 Sift the flour, baking powder, and starch together. Gently fold in half of the dry ingredients, then gradually add the oil. Add the remaining dry ingredients. Mix gently with a whisk until the mixture is smooth and uniform. If the mixture is too thick, add a little warmed milk.
- 2 Line a sufficiently large plum cake pan with parchment paper, pour in the batter, smooth it out with a spatula, and bake in a preheated oven at 180°C (350°F). The whole wheat plum cake will bake for about 40-45 minutes. To check if it's cooked through, always insert a toothpick into the cake before removing it from the oven: if it comes out clean, the whole wheat plum cake is ready. Let it cool to room temperature before enjoying. Once cooled, dust the surface with powdered sugar and serve.
