If you prefer, you can also serve it as a dessert at the end of a dinner, perhaps accompanied by a scoop of vanilla ice cream: it will release all the goodness of simplicity and will pleasantly surprise your guests.

It is really simple to make , even for novice cooks, because it involves creating a soft mixture of eggs, sugar, flour and butter, which is then slowly cooked in a static oven , after being garnished and stuffed with delicious apple slices.

You can also vary the recipe a little to your taste, for example by sprinkling some icing sugar on the cake as a final decoration, or enriching the filling with pieces of dried fruit or chocolate chips.

  • Arborea Lactose-Free Yogurt 83 g
  • Granulated sugar 100 g
  • Eggs 120 g
  • Arborea Lactose-Free Butter 47 g
  • Golden apples 160 g
  • Yeast 9 g
  • Cinnamon 4 g
  • Lemon juice 67 ml

Instructions

  • 1 To make the light apple and yogurt cake, start by washing and peeling the apples, then cut them into thin slices, drizzle them with lemon juice, and turn them well with a spoon to prevent them from browning.
  • 2 In a large bowl, whisk the eggs and granulated sugar until light and fluffy. Add the melted, warm lactose-free butter, the lactose-free plain yogurt, the sifted flour, and finally the baking powder and cinnamon, stirring from the bottom up to avoid deflating the mixture. Continue to gently work the mixture until it has a creamy consistency and is free of lumps.
  • 3 Line a 24 cm diameter springform pan with baking paper, previously greased with butter or seed oil, then pour in half of the mixture, place a layer of apple slices on the surface and then pour in the other half, decorating the surface again with the apple slices arranged in a spiral.
  • 4 At this point, bake the cake pan in a static oven preheated to 180° and leave to cook for 45 minutes, doing the toothpick test at the end to check the cooking status.
  • 5 Once cooked, remove the yogurt and apple cake from the oven and let it cool to room temperature before serving.

Variations

If you love the delicacy of apples but can’t live without the intense flavor of chocolate, replace a small amount of flour with unsweetened cocoa powder . This will create a moist apple, cocoa, and yogurt cake with a truly irresistible flavor. Alternatively, you can add chocolate chips to the mixture for an extra touch.

As an alternative to lactose-free plain yogurt, when preparing the cake, you can use a jar of lactose-free vanilla yogurt, lactose-free coconut yogurt, or any flavor you like .

If you’d like to add a touch of crunch and autumnal flair to this soft and nutritious cake, try adding some coarsely chopped walnuts to the batter. Once you’ve checked that the cake is fully cooked, let it cool to room temperature. For a truly irresistible touch, sprinkle the top with powdered sugar and cinnamon and top with small cubes of caramelized apple.

Finally, for a more indulgent dessert , ideal for a post-meal treat, cut the cake into portions and serve with a yogurt mousse made with lactose-free yogurt or lactose-free custard. This latter variation is closer to a great English classic, apple crumble , a crumble filled with cinnamon-scented apples and topped with crunchy crumbs (the crumble) of crumbled and baked dough. Apple crumble, in fact, is usually accompanied by the traditional custard, a delicious custard.
