Spaghetti with Spider Crab

- Spaghetti 320 g
- Spider crab 600 g
- Water 500 ml
- Garlic 1 spicchi
- Datterini tomatoes 200 g
- Extra virgin olive oil 40 ml
- Brandy 40 ml
- Salt q.b.
- Pepper q.b.
Instructions
- 1 To prepare spider crab spaghetti, you must first boil the shellfish. Bring a pot of salted water to a boil, and when it reaches a boil, drop in the spider crabs and cook for 5 minutes. Then, drain them and open the shells, retrieving all the pulp, eggs, and meat inside. Be sure to remove the meat from the legs and claws as well.
- 2 Make a fish stock using the shellfish scraps and about 500 ml of water. Boil it for about 20 minutes and add a little salt at the end. Meanwhile, bring a large pot of salted water to the boil to cook the spaghetti.
- 3 Brown the whole garlic clove in a pan with a few tablespoons of oil, then remove it and add the spider crab meat. Cook for a few minutes over medium heat, then deglaze with the brandy. Once the liqueur has evaporated, add the halved cherry tomatoes and the fish stock.
- 4 While the crab sauce is cooking, boil the spaghetti, then drain it al dente and finish cooking by tossing it in the pan with the crab sauce. Divide the crab spaghetti into portions and sprinkle with freshly ground pepper before serving.
