Potatoes “a Schiscionera”

Patate a schiscionera is a tasty dish from Sardinian tradition, perfect to serve as a side dish.
This ancient dish, which owes its name to the earthenware pan in which it was traditionally cooked (sa schiscionera), is made with just a few simple ingredients: potatoes, garlic, extra virgin olive oil, and parsley are all you need to bring excellent patate a schiscionera to the table.

- Potatoes 700 g
- Parsley 1 ciuffi
- Garlic 1 spicchi
- Vegetable broth 100 ml
- Extra virgin olive oil q.b.
- Salt q.b.
- Pepper q.b.
Instructions
- 1 Iniziate la preparazione delle patate a schiscionera sbucciando, lavando e tagliando le patate a cubetti regolari grandi circa 1 cm. Lavate anche il prezzemolo, sbucciate l’aglio, privandolo dell’anima e tritateli insieme.
- 2 Pour a few tablespoons of extra virgin olive oil into a pan and add the chopped garlic and parsley, letting them sauté for no more than 2 minutes. Now add the diced potatoes, season with salt and pepper, and let them brown for another 2 to 3 minutes over high heat, stirring to prevent them from burning.
- 3 Moisten the potatoes with a ladle of vegetable broth and, once it starts to boil, lower the heat and continue cooking for about 20 minutes. Stir the potatoes from time to time and, if necessary, add more vegetable broth. Patate a schiscionera should be served piping hot.
