Oven-Baked Sheep Ribs
Description
Sheep meat is one of the most beloved and common ingredients in Sardinian cuisine, as it is cooked and eaten by shepherds at the end of a long day’s work.
This tender and flavorful meat is not only cooked on a spit over an open flame but can also be perfectly prepared in your home oven, as suggested by our recipe for oven-roasted sheep ribs.
Seasoned with the right herbs and spices, they become even more flavorful and can be served on plates accompanied by a side of potatoes or salad.

- Sheep ribs 800 g
- Dried tomatoes 300 g
- Parsley 15 g
- Garlic 8 g
- Extra virgin olive oil 50 ml
- Salt 6 g
- Pepper 3 g
Instructions
- 1 To cook the sheep ribs in the oven, start by washing the ribs thoroughly under running water and drying them with a cloth.
- 2 In a bowl, prepare a mixture by finely chopping the sun-dried tomatoes, garlic, and parsley, then season it with oil, salt, and pepper.
- 3 At this point, massage the ribs with the prepared seasoning and spread the remaining mixture in a well-oiled baking dish.
- 4 Place the ribs inside the baking dish and bake them in a preheated oven at 180°C (356°F) for 45 minutes.
- 5 Once the cooking time is over, take the lamb ribs out of the oven and let them cool slightly before serving.
