Fava Bean Cake
Description
Fava Bean cake, or turta di faixedda, is a typical Sardinian dish , one of the many savory pies for which this region is famous. Its main ingredient is fava beans. Although the name might suggest a savory pie with a puff pastry base, favette cake is actually more similar to an omelette.
This fava bean cake is typically made around Easter Monday and brought along for the traditional picnic. It’s also incredibly easy to make. To make it even easier and lighter, you can also bake it. Here’s how.

- Fava Bean Cake 1000 g
- Breadcrumbs 67 g
- Sardinian Pecorino 35 g
- Eggs 3
- Spring onions 1
- Arborea UHT Cooking Cream 15 ml
- Arborea butter 27 g
- Extra virgin olive oil q.b.
- Salt q.b.
- Pepper q.b.
Instructions
- 1 When making the fava bean cake, the first thing you need to do is shell the beans and rinse them under running water. Wash and finely chop the spring onion and sauté it in a pan with a few tablespoons of extra virgin olive oil. When it's slightly wilted, add the fava beans, season with salt and pepper, and cook until done.
- 2 Once the beans are ready, turn off the heat and let them cool. Meanwhile, prepare the frittata filling by combining the eggs, cream, grated pecorino cheese, and breadcrumbs in a bowl. Whisk everything together to combine the ingredients. Once they've cooled, add the beans and mix again.
- 3 Place a large skillet over high heat, add the butter, and, once both are hot, pour in the fava bean cake mixture. Cover the pan with a lid and cook the fava bean cake over low heat for at least 7 minutes, then turn it over using a large plate to avoid breaking it, and cook for another 7 or 8 minutes. Fava bean cake is excellent both hot and cold.
