Zichi bread with sauce

Zichi bread, which is originally from the Bonorva region, is a prodotto agroalimentare tradizionale, which means it is listed as a traditional agri-food product by the Italian government.
It’s a very versatile ingredient, which can be ripped up and enjoyed in a delicious sheep broth, or served with boar and Gran Campidano sauce, as in this easy and tasty recipe.

- Zichi bread 400 g
- Boar meat 450 g
- Tomato puree 1000 ml
- Bay leaves 15 g
- Carrot 65 g
- Celery 65 g
- Onion 30 g
- Extra virgin olive oil 15 ml
- Dry white wine 100 ml
- Gran Campidano 100 g
- Salt 20 g
Instructions
- 1 Start the preparation of zichi bread with sauce by browning the boar meat in hot oil with the chopped onion, carrot and celery.
- 2 Add a slug of white wine, season to taste with salt, add tomato sauce and the bay leaves to season, then cook everything on a low heat for around 1 hour.
- 3 When the sauce is ready, boil the zichi bread in salted water for around 10 minutes.
- 4 After 10 minutes, drain the zichi bread and mix it in the pan with the sauce, stirring carefully.
- 5 Sprinkle with Gran Campidano and serve your zichi bread with sauce!
