Cardoons in Oil

- Wild cardoons 1000 g
- Lemons 3
- Garlic 2
- Cups white wine vinegar 2
- Bay leaves 4
- Extra virgin olive oil q.b.
- Salt q.b.
Instructions
- 1 Begin by cleaning the cardoons: remove the side leaves, spines, and any tough parts. Wash them carefully and soak them in water with lemon juice.
- 2 In a large pot, bring salted water and 2 cups of vinegar to a boil (about 100 ml of vinegar per liter of water). Add the cardoons and boil for a few minutes until just tender. Drain and let them cool. Meanwhile, coarsely chop the garlic.
- 3 Lay a clean white kitchen towel on your work surface and place the cardoons on it to dry. Then, arrange them neatly in sterilized glass jars (sterilize in the microwave for 5 minutes at full power). Add the chopped garlic and a few bay leaves to each jar.
- 4 Fill the jars with extra virgin olive oil, seal tightly, and store in a dry place for at least 1 month before consuming.
