- Sea urchins 20
- Spaghetti 360
- Garlic 1
- Parsley sprigs 1
- Extra virgin olive oil q.b.
- Salt q.b.
Instructions
- 1 First, clean the sea urchins. Cut them in half starting from the mouth, carefully open them, scoop out the orange flesh, and place it in a bowl.
- 2 Once you have cleaned all the sea urchins, put a pot with plenty of salted water on the stove and, when it comes to the boil, add the spaghetti to cook them.
- 3 Pour the extra virgin olive oil into a pan, add 1 crushed garlic clove, and sauté for a couple of minutes. Drain the spaghetti al dente and add it to the pan, season with chopped parsley, and stir.
- 4 Now flavor the spaghetti with the sea urchin pulp, which should not be cooked, and plate it. Serve the spaghetti with sea urchins piping hot. Enjoy!
