Guttiau bread is a richer version of carasau bread, seasoned with oil and salt after cooking to make it even tastier.

If you’re looking for a great appetiser that recalls all the flavour of Sardinia, you can pair it with spreadable goat cheese.

Here’s how to make perfect guttiau bread.

PRocedure
STEP 1

Prepare carasau bread by mixing the durum wheat flour, salt and brewer’s yeast melted in lukewarm water. Start mixing, slowly adding the water. Work the ingredients until you obtain a smooth and stretchy dough that you will divide into balls. Cover and leave to rise at room temperature for at least 3 hours.

STEP 2

After 3 hours, pre-heat the oven to 220° and warm up a baking tray. In the meantime, roll out the balls, creating discs of around 40 cm in diameter.

STEP 3

Place one disc on the baking tray and put it in the oven for 20 seconds. When it has risen, remove it and cut off the top layer so as to obtain another disc. Repeat this process with all the dough, then place all the discs on separate trays and bake for 5 minutes at 180°.

STEP 4

Now you have carasau bread. To prepare guttiau bread, season every sheet with extra virgin olive oil and salt before cooking for a couple of minutes under the grill until they become golden and crunchy. Once ready, serve your guttiau bread sheets with spreadable goat cheese.
